Departmental Overview

In the Division of Student Affairs and under the Residential Student Services Programs portfolio, Cal Dining is a self-operated dining program focused on culinary excellence, social responsibility and supporting the living/learning environment of our customers. With more than 12,000 meal plan holders, Cal Dining serves over 5 million meals per year in 14 facilities with a combination of residential "all you care to eat" dining, retail "a la carte" dining, training, early childhood education meal production, and catering. Cal Dining services the campus seven days per week, seventeen hours per day employing 450 full and part time staff and approximately 400 Cal student workers across multiple locations.

  • Develops and monitors budgets.
  • Controls financial operation with approved budgets.
  • Monitors and maintains operational costs of unit that include food cost, labor costs, and supplies.
  • Monitors and enforces cash handling policies and procedures.
  • Liaises between facilities to insure the repair and maintenance is being performed.
  • Directs executive chef in cycle menu planning.
  • Develops schedules, designs serving and seating area set-up, and administers and monitors performance requirements.
  • Manages for payroll of all staff.
  • Maintains appropriate staffing levels to meet business need.
  • Recruits, hires, trains, and evaluates staff.
  • Recognizes and acknowledges outstanding staff performance.
  • Supports and encourages staff development.
  • Approves Cal time within 48hours of the end of the month.
  • Maintains staff and keep attrition rates low.
  • Leads by example in working a variety of shifts including nights, weekends and holidays.
  • Uses University systems such as Cal Answers, Tablaeu, and UCPath
  • Enforces, reviews, and interprets safety and sanitation policies and procedures.
  • Audits and ensures compliance of food prep to QA standards and safety/security related to handling and preparation of food. Insures operations are kept neat clean and organized.
  • Manages food inventories, vendor deliveries, food preparation, and menu planning while adhering to strict regulatory guidelines.
  • Develops pars for ordering and minimizing waste.
  • Ensures appropriate use and care of kitchen and food service equipment, facilities, and materials.
  • Maintains an SAS notebook in the office with SAS requirements and printed forms to validate compliance.
  • Assists functional unit as needed.
  • May operate a campus vehicle.
  • Develops, implements, and maintains exceptional customer service standards.

Required Qualifications

  • Strong knowledge in food service and sanitation regulations.
  • Strong verbal and written communication skills in the English language, including active listening, dynamic flexibility, and critical thinking.
  • Ability to multi-task and ensure effective time management.
  • Strong decision-making and reasoning skills
  • Ability to develop original ideas to solve problems and conduct operations analysis and quality control analysis.
  • Strong and effective interpersonal and work leadership skills to provide guidance to all levels of personnel.
  • Intermediate computer application skills.
  • Strong budgetary and financial acumen experience and background.

  • Bachelor's in Food Service Management and/or equivalent experience/training.
  • Lead/supervisory experience, preferably in the food service industry.

  • ServSafe Manager Certification.

Under California law, the University of California, Berkeley is required to provide a reasonable estimate of the compensation range for this role and should not offer a salary outside of the range posted in this job announcement. This range takes into account the wide range of factors that are considered in making compensation decisions including but not limited to experience, skills, knowledge, abilities, education, licensure and certifications, analysis of internal equity, and other business and organizational needs. It is not typical for an individual to be offered a salary at or near the top of the range for a position. Salary offers are determined based on final candidate qualifications and experience.

The budgeted salary or hourly range that the University reasonably expects to pay for this position is $84,000.00 - $92,000.00.

  • This is a 100%, full-time (40 hours per week), career position that is eligible for full UC benefits.
  • This position is exempt and paid monthly.
