The University of St. Thomas invites qualified candidates to apply for a Prep Cook position within Dining Services.
The Prep Cook assists with all aspects of food preparation as part of the culinary team. This position is a 9 month, .75 FTE position and works a flexible schedule that may include nights and weekends as business levels dictate.
The Prep Cook reports to the Chef and assists with gathering food items, reading CBORD recipes and constructing food items for our Chef and Sous Chef to finish. This position is designed to provide meals to UST resident students as well as staff, faculty, and the general student body. This position is designated as Emergency Essential. Emergency Essential employees are expected to remain at work if campus closes during their regular work schedule or to report to work if the campus closing announcement is made before their regular work schedule begins.
Provide food preparation assistance where needed in back-of-house or front-of-house operations
Document usage on production worksheet
- Use proper unit of measure when documenting quantities, i.e. pans, servings, pounds
Maintain a clean work station
- Utilize green (detergent) and red (sanitizer) sanitizing buckets to keep countertops and work station clean and sanitized
This is a part-time, 0.75 FTE, benefits eligible position. : High school diploma or its equivalent and two years of experience with high volume food preparation required
: Serv Safe certified from the State of Minnesota and short order cooking experience.
Skill in: basic cooking methods and techniques; basic knife handling/sharpening/maintenance; how to use, maintain and clean a wide variety of kitchen equipment.
Ability to: communicate effectively and read printed materials, understand and follow recipes, work efficiently and complete tasks in a timely manner, prioritize assignments, follow oral and written directions, get along well with others, work in close proximity to others, perform accurate arithmetic calculations and common weight/volume conversions, multi-task and switch tasks quickly when necessary, maintain accurate records and food-related reports, and maintain an organized and clean work station
Knowledge of: safe food handling guidelines, including ServSafe, FIFO and HACCP principles, methods and equipment used in a restaurant setting, safe work practices and sanitation related to food preparation and service, basic computer applications related to the job.
